Now that I'm basically a stay-at-home, I realized I probably need to add to my cooking abilities. Well, at least increase the types of food I cook, since if I let Nick decide what we're eating, dinner menus get monotonous. (case in point, we've had spaghetti at least once a week for the past month. If you count leftovers, we have spaghetti 3 times a week :P. It's getting old).

Anyway, the first recipe I tried was actually found on a can of Rosarita refried beans (Creamy chicken tortilla soup). Nick actually wanted a back-up entree when he found I was attempting it. Hmm, distrust the source or distrust the cook? :D

It actually turned out well though. We both enjoyed it- which is a plus for Nick since if I don't like a recipe, I usually don't cook it again (which sucks if Nick actually likes it). I varied the recipe slightly though, and sauteed diced onions and garlic first before adding the rest of the ingredients... then used grilled chicken and mozzarella to top...

Yummy and easy! works for me!
